In Korea, braised hairtail (Galchi Jorim) became popular thanks to its rich flavor, made by simmering thick slices of radish in a pot until the broth is absorbed, with tender hairtail fish cooked without any unpleasant odor. The spicy, savory flavor earned it a reputation as a beloved “rice thief.” Try making this hearty, spicy braised hairtail today.

Suggested Ingredients (for 2 servings):
1 hairtail (cut), 1 slice of radish or potato (about 2cm thick), ½ stalk of green onion, 1 cup water (200ml).
Cooking time: about 30 minutes.

Cooking Method:

1. Place sliced radish at the bottom of the pot and lay the cleaned hairtail on top. (Placing radish at the bottom helps the fish absorb the broth and prevents sticking.)

2. Add the seasoning and water, then cover and simmer until cooked through. While cooking, spoon the sauce over the fish so that the seasoning penetrates well.

3. When the fish is almost done, add the green onion, simmer briefly, then turn off the heat.
